Simple Ice Cream Cake

Easy Peasy Ice Cream Sandwich Cake

Sometimes the things you find on Pinterest turn out to be huge flops! I see so many great things but when I try them out I get so disappointed! 

This cake, however, is not one of those things! We've used this recipe at least a dozen times and it always turns out perfect! 

I served it at my son's Pirate Birthday Party back in August and one of the dads that came has reminded me almost weekly since then that he wanted me to make the same cake for his birthday. So yesterday we showed up at his house with this deliciousness in hand!

Here's how to make it


You'll need:

1 box of 12 count ice cream sandwiches
1 small tub of cool whip
Chocolate and/or caramel sauce topping
Crumbled up candy bar of your choice (I just stole 5 fun size snickers from my kid's Halloween stash)

How to:

1.) Prep- Thaw the tub of cool whip and chop up your candy bars. 

2.) Unwrap the ice cream sandwiches and lay them down 6 in a row on a pretty platter.           

3.) Spread some cool whip over this bottom layer, drizzle it with chocolate/caramel topping and sprinkle some candy bar pieces on top. 

4.) Add another layer of ice cream sandwiches. This time lay them down horizontally over the first layer. You can get 3 across.
 You'll need to kind of squish the sandwiches down into the pieces of candy bar to make them lay flat.
 Busted! My son is caught on camera sneaking some! I didn't know until I started writing this post! :)

5.) Spread the rest of the cool whip over the cake, make sure you get the sides too.

6.) Drizzle the chocolate and caramel syrup toppings over the top in a back and forth motion. I like to get a little on the platter.

7.)Sprinkle the rest of the chopped up candy bars on top.

8.) Put the cake back in the freezer until you're ready to serve. The cool whip will freeze and harden making the cake stay together better when you cut it.
